Paul Sauer 2007
(1,5 l/Magnum)
The wine is of dense, powerful structure and soft elegance, with spicy aromas and ripe fruit flavor.
A dense ruby red in the glass.
In the nose some slightly faded aromas after ripe berries and spices. With air it unfolds and the aromas become clearer.
On the palate a dense and complex body. With well integrated acidity and strong, fine-grained and silky tannins. The aromas are reminiscent of dark berries, cassis, cherries, but also very fine wood. Vanilla, carnations, some cinnamon. Well dosed. Well balanced and very elegant wine. The finish is dry and long.
A traditional blend of 65% Cabernet Sauvignon, 20% Cabernet Franc and 15% Merlot. It is ripened in new 225 l French Neverfässern for 22-26 months. The wine is often referred to as more elegant than the rectilinear Cabernet Sauvignon.
