Pinot Noir 2017 Our Pinot Noir comes from the smallest vineyard on the farm - a 1 hectare block that yields only enough grapes for a few barrels every year. The grapes were destemmed and fermented at 18 degrees Celcius in stainless steel. After dryness, the wine was matured in second-fill French oak for 14 months. TASTING NOTES The nose gives an immediate impression of limes and cranberries with some subtle white pepper and ‘fynbos’. The texture of the wine is surprisingly rich, which balances out the bright natural acidity of the Pinot Noir grape. The wine finishes very long, with savoury red fruit and lovely warm toastiness present on the palate. ANALYSIS Alcohol: 14.34% Residual Sugar: 4.8 g/l Acidity: 8.2 g/l pH: 3.38
